The mill

You recognize the mill from its scent, that unique aroma of fresh flour that you can unmistakably find in the dish, in homemade fresh pasta, or in friselle, bread, and focaccia. First of all, of ‘wheat’, which in Salento can only mean durum wheat, the most prized kind that sways in the wind until June, which needs a lot of sun to turn golden. Il Mulino is a story of courage, the machinery from the 1960s made beautiful by meticulous and daily care, making the beautiful vintage machine shine still today. A revolution for a small town with a lot of agriculture, a challenge for a family that, from one day to the next, became an artisanal business: for three generations it has been growing, even now, with the addition of a retail outlet, where among wooden shelves, all the flavors of the past can be found.
